This bright and zesty dressing is amazing on pasta, vegetables, and meat. It's both versatile and delicious.
1. In a blender, combine garlic, ginger, chile flake, and lemon juice, as well as miso and soy if using. Blend to form a paste.
2. Add the cilantro and spinach and pulse to break down the leaves. With the blender running, slowly stream in the oil to form a dressing. Season to taste with salt.
Note: if using miso and soy sauce, you will need much less salt in the recipe.
