This zesty salad is simple, clean, and healthy.
- 1 avocado
- 1 grapefruit
- 2 tsp. dijon mustard
- about 1/2 cup olive oil
- 1 tbsp. chopped cilantro
- Peel and slice the avocado, and cut the grapefruit into supremes.
- Squeeze the remaining grapefruit flesh to get the remaining juice out. Combine with dijon mustard and whisk in the olive oil to make a vinaigrette. Season with salt and pepper.
- Arrange the avocado and grapefruit on a plate and drizzle with the grapefruit dressing and chopped cilantro.
