This healthy-ish dish is makes the perfect breakfast or even light lunch.
- 1 slice bread, toasted
- 1 avocado, sliced
- 1 tsp. cilantro, chopped
- 1 lime wedge
- 1 tsp. chives, chopped
- 1 tbsp. red onion, small dice
- olive oil, as needed
- 1 egg
- Salt, to taste
- Shingle out the sliced avocado onto the toast and squeeze the lime juice over it. Season with salt and top with herbs and sliced onion.
- Cook the egg to desired doneness and place on top of the avocado toast. Drizzle with olive oil and season to taste with salt.
Note: For a low carb option, try this as a lettuce wrap with hard boiled egg
