This healthy-ish dish is makes the perfect breakfast or even light lunch. 


Ingredients



  • 1 slice bread, toasted 

  • 1 avocado, sliced

  • 1 tsp. cilantro, chopped

  • 1 lime wedge 

  • 1 tsp. chives, chopped

  • 1 tbsp. red onion, small dice 

  • olive oil, as needed 

  • 1 egg

  • Salt, to taste 


Directions



  1. Shingle out the sliced avocado onto the toast and squeeze the lime juice over it. Season with salt and top with herbs and sliced onion. 

  2. Cook the egg to desired doneness and place on top of the avocado toast. Drizzle with olive oil and season to taste with salt. 


 


Note: For a low carb option, try this as a lettuce wrap with hard boiled egg
