Healthy Sweet Potato & Green Tomato Frittata

Ingredients
- 6 Eggs, scrambled (or enough to cover the ingredients)
- 1/4 Cup Cream Line Milk, Grass Fed
- 1/2-1 Cup Young Cheddar, Grass Fed, Shredded
- 2 small Sweet Potatoes, Shredded and Cooked
- 1 small Organic Onion, Small Dice
- 1/2 Bell Pepper, Small Dice
- 1 Green Tomato, Small Dice
- 1-2 Spicy Peppers, Minced
- 1-2 Cloves Garlic, Minced and Cooked
- 1 F2C Frittata Seasoning Blend (Sea Salt, Black Pepper, Garlic Powder, Onion Powder, Thyme, Chili Flake)
- Optional: Bacon, Nitrate Free, Chopped and Cooked
Directions
You can do this recipe vegetarian or with Bacon (really any protein you want). If you are using bacon add chopped bacon to cast iron (if you have it, if not use an oven safe saute pan) and cook on Medium High heat (or medium if you feel more comfortable) Once bacon is cooked, add F2C Seasoning Packet, sweet potatoes, green tomatoes, onion, bell pepper, garlic and spicy peppers (if you don't like spicy avoid this step). Cook for about 4-6 minutes stirring frequently. Leave mixture in bottom of pan. Now in a separate bowl whisk the eggs and milk and cheese mixture. Add to top of potato mixture and place entire contents in oven for 10-14 minutes or until egg mixture has set up.
