What a fun treat for the family. I grew up as a child on a border town of Mexico in south Texas. Mexican corn was just called corn to this little fat kid. And it was like dessert. When I want authentic corn but don't want to cook I go to Elotes Don Toño at 1314 S Glenstone Ave, Springfield, MO. ~Chef Paul Allen
1-6 Ears of Sweet Corn
1-3 Tbsp Mayonnaise
1-2 Tbsp Chile Powder
1-2 Tbsp Parmesan Cheese
1-2 Tbsp Seasoning Salt
1-2 Wedges of Lime
Step 1
Grill corn in husk on hot grill or in oven at 400 degrees for 15-20 minutes. (I like the grill to get the char flavor)
Step 2
Brush on Mayonnaise, sprinkle with seasoning salt, chili powder and parmesan cheese. Garnish wih lime wedges, it's that easy.
