Peach Coleslaw

For an added kick, add a diced up habanaro pepper to this sweet peach coleslaw. You can add pretty much any shredded vegetable to your slaw. ~Chef Austin Merath


1/2 Cabbage Head

1 Peach

1/2 C Mayonnaise

1 Tbsp Apple Cider Vinegar

1/2 Lemon, Juiced

TT Sea Salt and Cracked Pepper


Step 1
Shread half head of cabbage with mandoline or box grater. Peel and dice peach into small cubes.

Step 2
In a large bowl, whisk mayonnaise, vinegar, and lemon juice. Season to taste with salt & pepper.

Step 3
Add cabbage and peaches to dressing. Toss to coat all the cabbage and let sit in refrigerator for 2 hours to marinate. Serve with some pulled pork sliders!
