Sirloin Fajitas

Always a quick meal at my house. Fajitas are easy and quick to make, serve with some rice for a complete meal! The secret is a heavy duty pan that can handle a lot of heat. I suggest a trusty cast iron skillet or an all-clad stainless steel pan your fajitas. ~Chef Austin Merath


1 lb Sirloin Steak

1 Red or Green Bell Pepper

1 Small Onion

1 Lime

Flour Tortillas

Olive Oil

Smoked Paprika

Ground Cumin

Mexican Oregano 

Mild Chili Powder

Garlic Powder

Sea Salt & Black Pepper


Step 1 (Prep)
Thinly slice the onions and bell pepper into strips, place into a large bowl with a good drizzle of olive oil over the top.

Step 2
Rub a small amount of oil onto your steak. Sprinkle a light layer of each of the seasonings over the steaks, and over the onions and peppers in your bowl, toss veggies to combine. 

Step 3 (Pickup)
Heat a large cast iron skillet over med-high heat for 5 minuites. Add the veggies and quickly stir to saute, about 4-5 minuites. Remove from pan to bowl and cover with foil. 

Step 4
Add the steak to the pan and sear on each side for 4 minutes, or untill desired doneness. Take to cutting board and let rest for a couple of minutes. In the mean time, cut your lime in half and squeeze half over your veggies, half over your steak. Thin slice your steak and plate up! Serve with warm flour tortillas, sour cream, and pico de gallo.
