Its doesn't have to be Hanukkah to enjoy latkes! These are delicious fried fritters that are quick and simple to make. If you cakes aren't sticking together when you're making them, sprinkle a little flour in the mix to help bind everything together. ~Chef Austin Merath


Ingredients


2 Large Sweet Potatoes


1 Large Leek


1 Egg


EVOO (Extra Virgin Olive Oil)


Sea Salt


Crack Black Pepper


Directions


Step 1 (Prep)
With a box grater, shred a washed sweet potato, skin and all, on the largest holes. Place in a bowl.


Step 2
cut the end off of the leek, wash of you see any dirt. Shred only the white-light green part. Add to sweet potato. Beat the egg in a small bowl and add to the leek and potatoes. Season with sea salt and pepper.


Step 3 (Pickup)
Heat a large cast iron skillet over med-high heat for 5 minuites. Add the EVOO right before you need to fry. 


Step 4
Firmly pack a palmfull of the latke mix in your hands and add it to the hot oil. Fry 4-5 patties at a time until each side is very browned. Remove from pan, sprinkle with small amount of  finishing salt. Traditionally served with apple sauce. Sour cream works well too!
