Ingredients
1/2 C Unsalted Butter, Softened
1 Lemon, Zested and Juiced
1/2 C Organic Sugar
1/3 C Pure Honey
1 3/4 C All-Purpose Flour
1 Tsp Baking Soda
1/2 Tsp Sea Salt
Powdered Sugar
Directions
Step 1
Preheat oven to 350 degrees F
Step 2
Using a stand mixer with paddle attachment beat butter until fluffy. Cream together the butter, sugar, lemon zest, and lemon juice, scraping the sides when necessary. Sift the flour, baking soda, and salt together and then add to the wet ingredients.
Step 3
Chill dough for at least 30 minutes. Form dough into one inch balls and place on a COOL baking sheet, about 2 inches apart. Bake for 5-7 minutes or until the bottoms are barely light brown (still fluffy and yellow on top). Once cooled, toss in powdered sugar and enjoy!
