Lemon Pepper Chicken

Weather you have a special diet or are trying to eat a little lighter, this lemon pepper chicken is packed with flavor without adding a whole lot of fat. From the kitchen of Vintage Cookery ~Chef Austin Merath


4 Chicken Breast

1 Lemon, Zested and Juiced

1/4 C Olive Oil

1 Tbsp Fresh Cracked Pepper

Sea Salt, to Taste


Step 1
Place all ingredients into into a large zipper bag and marinate for atleast 4 hours or overnight. 

Step 2
When ready to cook, remove chicken from bag and discard marinade. Heat a large cast iron skillet over medium-high heat and place breast into pan. Sear on both sides for 3-4 minuites and then continue cooking on medium heat untill chicken is done. The internal temperture should be 160F or the juices will run clear.

Step 3
Slice and serve over fesh arugula ; )
