Easy Chicken, Broccoli & Rice Bake

This is a great one pot recipe! 


  • 4 pk Chicken Legs, Non GMO

  • 1 Bunch Organic Broccoli, Large Dice

  • 2 Stalk Organic Celery, Small Dice

  • 1/2 Local Onion, Small Dice

  • 1 Cup Organic Rice

  • 2 Cup Water or Chicken Stock or Veggie Stock

  • 1-2 Tsp Sea Salt (To Taste)

  • 1-2 Tsp Cracked Black Pepper (To Taste)

  • 1 Bay Leaf (Optional)

  • 1-2 Tbl Butter

  • 2 Tsp Chicken Stock Powder (Optional)

  • 1-2 Tsp Cayenne Pepper (If you like it spicy)


In medium to large sauce pan add butter, chicken, celery, and sautee until a nice golden color has come unto skin. Now add the rice and broccoli, add more butter if needed. Stir until a light color has gazed upon the rice. Now add your remainder of ingredients. Get to a boil, and cover with tight fitting lid. Reduce to just over low (2) on your stove and cook for exactly 21 minutes without removing lid. (crucial to not remove lid during cooking process) Remove from heat and leave covered for up to 1 hour. Stir with Rice Fork when before serving.
