Mountain Man Pie

This is a classic Missouri dish during the cold months that will also incorporate winter veggies at their finest. We also sneak in super food chard that the family won't even notice is there! 


  • 1 lb Grass Fed Ground Beef, Organic (Thawed)

  • 4-6 Carrots, Organic (Med Dice)

  • 1 ea Onion, Organic (Med Dice)

  • 1 head Garlic, Organic (Small Dice)

  • 1 bu Rainbow Chard, Organic (Rough Cut)

  • 2 lb Potatoes, Organic (Large Dice, Washed but un-peeled)

  • 1 pouch Mountain Man Seasoning (Sea Salt, Black Pepper, Garlic Powder, Onion Powder, Chili Flake, Dry Mustard, Paprika)

  • 1 pouch Potato Seasoning (Butter, Sea salt, Black Pepper, Garlic Powder, Dry Thyme)

  • 1 tbl Butter, Grass Fed

  • 4 oz Cheese Curds, Grass Fed (Crumbled)


Prepare your mis en place by chopping all veggies, mixing seasoning with ground beef by hand with "Mountain Man Seasoning" in med bowl, and get water boiling for potatoes. In a large non-stick saute pan heat butter on Medium Heat until melted. Add Seasoned Meat, Carrots, Onion, Garlic, and Chard. Cook until meat is cooked stiring occasionally.

Add potatoes to boiling water and cook until fork tender, then add to bowl still hot and add Potato Seasoning Pouch and combine with potato masher. (don't over mix, they will become gummy, I prefer nice lumps and also I don't peel my potatoes)

Add ground beef mixture to the bottom of a casserole pan (you can use individual souffle cups, muffin pans, loaf pans, really anything) and top with potato mixture. Then add crumbled cheese curds. Bake in 400 degree oven for 14-18 min.
