Stuffed Delicata Squash with Peppers & Pork

  • 1-2 Delicata Squash

  • 1lb Ground Pork

  • 1/2 Candy Onion, Chopped

  • 1 Sweet Pepper, Diced 

  • 1/2 Bell Pepper, Diced

  • 4-6 Garlic Cloves, Minced 

  • To Taste Sea Salt

  • Cracked Pepper

  • 1 Tbl Butter

  • 1-2 Tbl Safflower or Sunflower Oil

  • 1 Dollop of Sour Cream 


Step 1
Cut Delicata long ways and remove seeds and inner core.  Baste with oil and sea salt.

Step 2
Dice onion, sweet pepper, and bell pepper. Mince garlic cloves. 

Step 3
Preheat oven to 350F and bake squash for 40 min.

Step 4
Meanwhile saute the vegtables and ground pork in butter until browned and cooked through. Season to taste.

Step 5
When Delicata is fork tender scoop out the flesh and add to the meat mixture. Season mixture and add back into the squash.  Add a dollop of sour cream and serve.
