Enjoy a guilt-free version of your favorite comfort food! The organic rigatoni & sausage casserole is perfect for weekly meal prep.
Bring a large pot of water to a boil, and then prepare the rigatoni noodles according to the packaging. Drain and set aside.
Heat skillet over medium temperature. Sauté onions in olive oil for 3-4 minutes. Crumble in the sausage and begin browning the meat for 5 minutes.
Mix in pasta sauce and let simmer for 5-7 minutes with occasional stirring. Remove skillet from heat.
Coat a thin layer of pasta sauce along the bottom of a baking dish. Empty half of the rigatoni noodles after cooling, and then layer the noodles with half of the mozzarella cubes along with the remaining sauce. Top off with the remaining noodles, the remaining mozzarella and sauce. Top with parmesan cheese.
OPTIONAL: For meal prep, cover the baking dish and store in the refrigerator or freezer.
When you’re ready to cook your casserole, preheat the oven to 350°F and bake for 25 minutes (after refrigeration) or 2 hours (after freezing). The casserole should be lightly bubbling. Garnish, slice, and enjoy while hot.
