Dice tomato, avocado, onion, and bell pepper, and add to a bowl. Finely mince the cilantro or parsley and add to the bowl.
In the mixing bowl add olive oil, lemon juice, salt & pepper and mix by hand to not damage gorgeous avocado.
Lay Bibb Leaves on plate and spoon on the avocado tomato mixture and serve.
