Fiesta Grilled Romaine Hearts with Lime, Tomato and Avocado

This "Fiesta" is easy to make and warms the soul even in the Winter Months. I love grilling everything because of all of the flavor it adds. Let your husband feel like the man he was born to be by grilling something. I bet you might even get a steak out of the deal ;) 


  • 2 Romaine Hearts, Cut in Half Longways

  • 1 Tomato, Large Dice

  • 1 Avocado, Large Dice

  • 2 Tbl Cilantro, Small Dice

  • 1/2 Sweet Pepper, Small Dice

  • 1/2 Lime, juice

  • T/T Sea Salt (to taste)

  • Bonus (To make this Fiesta a Party add your favorite Oil, Spicy Peppers and favorite Cheese)


First thing I want you to do is relax, turn some music on and pour your self a glass of something. Seriously take a moment and get out your favorite glass, pour some water, sweet tea, wine, virgin daiquiri or what ever you like to sip on. 

Now fire up your grill on med-high heat. Cut the romaine in half and brush with your favorite oil. Season with sea salt or your favorite steak seasoning rub. Place on grill for 2-3 min on each side. 

In a separate bowl combine all other ingredients and toss. Feel free to add your favorite dressing you have in your fridge. This looks beautiful on a platter or individually on a plate. Scatter your mixture from the bowl with juice over each grilled romaine heart evenly. Now who is the gourmet chef? You, that's who!
