I absolutely love Black-Eyed Peas! I grew up in Texas where it was tradition to bring in the new year with this good luck food. But as I grew up and became a Chef one thing is always key when making these amazing protein abundant legumes. Sautee Small Diced Onion in butter for 3-5 min at Medium-High Heat stiring occasionally. (if you are a novice, cook at Medium Heat for 6-8 min) Add Chopped Garlic and sautee till translucent. Add Sauvignon Blanc and Worcestershire and reduce down to sec. Add Chicken Stock, Sea Salt, Chili Flake and Black-Eyed Peas. Heat to a boil and then reduce temp to Low. You can cook for 10-20 min at low. This is going to marry the flavors. Feel free to turn heat off after and hold for up to an hour. Always taste and if you like more flavor add some more salt.
