Perfect Mashed Potatoes

The secret ingredient here is obvious: butter. Don't be afraid of it. These mashed potatoes are perfect and delicious.
- 2 lb. potatoes
- 1 lb. butter, room temperature
- 1 cup milk
- Scallions, sliced, optional
- Peel the potatoes and boil in salted water until just tender, 20-30 minutes.
- Drain the potatoes and combine with the milk and butter in a stand mixer and mix on low speed, with the whisk attachment, until just combined. Do not over mix the potatoes or they will become gluey. Season to taste with salt and serve with a sprinkle of sliced scallions.
