Spiced & Roasted Carrots with Apples

A nice spiced side dish for fall when you want something sweet to go with your savory :) Tougher apples like granny smith or honeycrisp work well in this recipe. If your carrots are small or thin enough, you don't have to peel or cut them!

1 Lb Carrots, Peeled, Sliced Down the Middle

1 Baking Apple, Cored and Sliced

2 Tbsp Agave Nectar (or Honey)

1/2 Tsp Cinnamon

Olive Oil

Sea Salt & Cracked Pepper


Step 1
Line a baking sheet with foil and preheat oven to 400F.

Step 2
Place sliced carrots and apples onto baking sheet. Drizzle with olive oil, just enough to coat, then drizzle agave nectar and toss together. Sprinkle over cinnamon, salt, and pepper. Roast in oven for 20-25 minuite untill fork tender. Serve immediatly or leave in warm oven with heat turned off untill ready to serve.
