A Farm 2 Counter twist on the classic potatoes o'brien. Enjoy for breakfast or as a side dish for dinner. ~Chef Austin Merath
1lb Sweet Potato
1 Onion
1/2 Green Pepper
2 Sweet Comb Peppers
4 Tbls Butter
Sea Salt & Cracked Pepper
Step 1
Peel and dice sweet potatoes and onion. Dice green pepper and sweet pepper removing any seeds.
Step 2
Heat a large griddle or pan over medium heat. Add butter to melt, then add in diced vegtables. Toss to coat in butter.
Step 3
Cook on medium heat, stirring occasionally. If things start to stick, add more butter. When sweet potatoes are soft and browned, season with salt and pepper then serve.
