Have leftover baked potatoes? Don't let them go to waste! This is one of Farm2Counter's favorite ways to use those up, hash browns! This uses a fun way to use your waffle iron too. If you don't have one, your trusty cast iron skillet should do the job too.

4-6 Organic Yukon Gold Poatoes, Grated
1/2 Organic Onion, Grated
1-2 Eggs, Local
1-2 Tbsp Organic Salted Butter
1-2 Tbsp Sour Cream or Plain Greek Yogurt
Sea Salt/Cracked Pepper
Step 1
Boil or grill potatoes the night before and cook till it is a little difficult to get in a fork (or just use your leftover baked potatoes!) Cool down and keep in cooler or fridge over night.
Step 2
Whisk 1-2 eggs in a large bowl. Add 1-2 tbl melted butter and sour cream. With an every day cheese grater, grate potatoes and onion into the large bowl. Add some sea salt and cracked pepper and mix with your hands. Add to waffle maker and enjoy the show!
