New Mexican Sweet Potato Rings

Ingredients



  • 1-2 Sweet Potatoes

  • 1-2 Tbsp Sunflower/Safflower Oil

  • 1-2 Tbsp Chili Powder

  • 1-3 Tsp Cayenne Pepper (Optional)

  • T/T Sea Salt


Directions


Step 1
Wash and cut sweet potatoes in rings (the thinner the crispier). 


Step 2
In a bowl mix sliced poatoes, oil, chili powder, and cayenne pepper so oil and seasonings coat evenly.


Step 3
Heat sheet pan in oven to 400 degrees. When oven is hot, take out sheet pan and pour in coated potatoes. It should sizzle so be careful. Put in oven for 10 minutes.


Step 4
After 10 minutes, remove and turn each piece and cook for another 10 min, repeat and turn each piece again and cook for 8-10 min. If you can poke with a fork easy, its done. Feel free to keep cooking and make crisper.
