~Chef Austin Merath - Vintage Cookery

1 Whole Fresh Turkey

2 Apples

1 Lemon

1/2 C Fresh Sage, Finely Chopped

4 Cloves Fresh Garlic, Minced

1 Stick Butter, Room Temperature

Sea Salt & Cracked Black Pepper

Step 1
Preheat oven to 350F,

Step 2
Take your turkey and remove any giblets from the inside. Wash out the inside with water, then pat dry the turkey with paper towles. Set aside to make herb butter.

Step 3
In a bowl, mix together with a fork the softened butter, minced fesh sage, garlic, and a few grinds of pepper.

Step 4
Quarter your apples and lemmons then stuff your turkey with them.

Step 5
With your hands, starting with the breast side, carefully go underneath the skin of the turkey to loosen it from the meat, being careful not to tear the skin. We are making room to slip the herb butter underneath. After the breast skin is pulled up, go towards the inner thighs and legs to loosen the skin.

Step 6
Take a tablespoon of herb butter at a time and place under the loosened skin starting from the back and working your way up to the front. Never skimp on the butter!

Step 7
Season outside of turkey with salt and pepper. Place turkey on roasting pan with a grate underneath (or on top of chopped onions, celery, and carrots) so that it is not touching the bottom directly. Roast in oven untill internal temperture is 160F (you really want to use thermometer, place in deepest part of breast to temp your bird), basting every 40 minutes with the juices. Allow to rest for 5-10 minutes before carving.
