A clean and simple version of a classic comfort food. Great for busy weeknights.
1) Cook rice according to packaging.
2) Mix cooked rice, raw mushrooms, and thyme together.
3) Spread out evenly in a shallow casserole dish.
4) In a separate bowl, whisk together the egg whites, milk, and cheese of choice (parmesan recommended). Pour over the rice.
5) Bake 350 for about 30 minutes.
Tip: If the rice appears to be getting too brown, place a piece of foil loosely over the top of the dish.
