This is sure to please every age! The kids don't eat Eggplant, they will eat this! Husband doesn't like eggplant, he will now!!! Use left overs for sandwiches the next day. 


Ingredients



  • 1-2 Local or Organic Eggplant, Cut into Fries (skin on)

  • 2 Cup Organic All Purpose Flour

  • 1 Cup Panko Bread Crumbs

  • 1-2 Non-GMO Local Eggs

  • 1/2 Cup Heavy Cream or Cream-Line Milk

  • 2-4 Cups Safflower or Sunflower Oil

  • To Taste Sea Salt & Pepper


Directions


Mix your bread crumbs and flour together and season with salt and pepper. (feel free to add a dry spice to this blend to kick it up) (to get real crazy add shredded parm to the mix)


Dredge your eggplant in breading mixture. In a separate bowl mix together the Eggs and Cream or Milk. Season this as well. Dredge eggplant in liquid mix then back to flour mixture. 


Deep fry until golden brown on each side. Serve with some Ghetto Spicy Aioli (mayo and sirachia) or Marinara.
