Hasselback Caprese Salads

Make an impressive presentation with a few simple ingredients! Caprese salad is one of those where fresh is best. Only make when tomatoes are at their prime season otherwise no matter how good a chef you are, this one won't turn out that good.

3 Fresh Roma Tomatoes

4 Oz Soft Mozzarella Ball   

1 Tbsp 18 Year Balsamic Vinegar (Good Quality Dove)

2 Tbsp EVOO  

Handful of Fresh Basil  

Dash of Sea Salt and Pepper


Step 1
Cut vertically into the tomatoes, making sure not to cut down through the bottom edge. Leave about a 1/2-inch of tomato flesh from the bottom of the tomato to the edge of the cut.

Step 2
Slice the mozzarella into 1/2-inch slices and wedge each between the tomato wedges.

Step 3
Insert basil leaf next to each mozzarella slice. Whisk olive oil and balsamic vinegar then drizzle over the hasselback tomato salad. Sprinkle with salt and pepper to serve.
