Step 1
Place a sheet tray or cast iron pan in without anything on in the oven. Set oven to preheat at 400 degrees to start heating pan.
Step 2
Wash beets very good by hand and trim. Cut into thin to medium wedges, place in a bowl and toss in oil and sea salt. Make sure every wedge gets coated.
Step 3
Take heated pan out of oven and pour beets onto pan making sure none are overlapping. Cook for 12 minutes, remove from oven and turn each piece, then cook 8 min, turn every piece, cook 8 min until all sides are crisp and caramelized. Serve hot or chill and use for a roasted beet salad.
