Spiralized Zucchini Noodles with Pesto Sauce

SImple, nutritious, and health-living oriented! Perfect for a light summer meal. 


Ingredients



  •          4 small zucchini

  •          1 cup packed fresh parsley leaves

  •          1/3 cup extra-virgin olive oil

  •         Season to taste with lemon juice, garlic, salt, and pepper


Tip: Cherry tomatoes also make a great garnish!


Directions


1.       Cut off ends of zucchini. Use a julienne peeler or spiralizer to slice the zucchini.


2.       Combine the basil and optional seasonings in a food processor and pulse until coarsely chopped. Slowly add the olive oil in a constant stream while the food processor is on. 


3.       In a medium bowl, toss the zucchini noodles and pesto sauce until fully coated. Add mixture to a skillet and heat to ideal temperature. Add optional cherry tomatoes during or after the heating process.


4.       Enjoy!
