1 Lb Zucchini
1/2 Lb Tomato
1 Bell Pepper
5-6 Garlic Cloves
3-4 Tbsp Butter
Sea Salt
Black Pepper
Step 1
Cut ends off Zucchini. Slice zucchini lengthwise then slice widthwise to make crecent moon shapes.
Step 2
Dice tomato and put into a bowl. Slice then dice bell pepper, set in seprate bowl. Mince garlic and set aside.
Step 3
In a pan over medium heat, add butter. Add zucchini and peppers. Sautee until peppers start to brown. Add the garlic and cook for 2 minutes.
Step 4
Add in tomaotes and mix to heat, about one minute. Season with salt & pepper. Serve hot!
