This is an easy recipe where you can be the chef and add whatever you like on top! Creamy polenta is the base, you can flavor it with any profile you want. You could make it greek with some feta chese and olives, or spanish with some peppers and cilantro!

Ingredients


Polenta


1 C Polenta (Coarse Cornmeal)


3  C Vegtable Stock


1 C Milk


Sea Salt to Taste


Toppings


2-3 Tbsp Butter


1 Onion, Diced


8 Oz Mushrooms, Sliced


1 Clove Garlic, Minced


3 Green Onions, Sliced


1/2 Tomato, Diced


Eggs, Poached


Shredded Cheddar Cheese


Crumbled Cooked Bacon (Optional)


Directions


Step 1
Polenta
In a medium pot, bring to a boil the stock and milk. Add the polenta and bring to a simmer and stir occasionally untill thick and creamy. Season to taste.


Step 2
Toppings
In a large saute pan over medium-high heat, melt butter then quickly add onions, mushrooms and cook untill onions are translucent. Add the garlic and cook unitll raw smell is gone. Take off of heat.


Step 2
Assemble
Place a good amount of polenta onto the middle of your plate. Spoon over mushrooms and onions, sprinkle diced tomato, green onions, and cheese ontop. Top with poached egg in the midde, dust with pepper.
